City Butcher and Barbecue is a collaboration by two of Springfield’s finest young culinary talents. The artisan butcher shop and Texas-style barbecue eatery opened November 14, 2014 — the brainchild of Jeremy Smith and Cody Smith.
The Austin, TX inspired shop is one of Springfield’s hottest culinary indulgences. The shop offers an array of custom butcher’s cuts, hand-made sausages, dry cured bacon, and an assortment of other artisan crafted meats. They also serve authentic Texas-style barbecue fresh from the smoker every day. The beautiful shop is conveniently located at 3650 S. Campbell in the Kickapoo corner shopping center. The butcher shop is open 10-8 Monday-Saturday with barbecue service starting at 11 a.m. and sold first come, first served until it is gone.
Jeremy and Cody boast extensive culinary resumes. Jeremy has worked in some of the finest kitchens in the world, including the 2 Michelin Star Aquavit in New York City, and Lantana Grille in Phoenix. Locally he has served as Sous Chef of Metropolitan Farmer. Cody has worked in some very fine restaurants, as well, including Bess Bistro in Austin, TX, Aviary Café in Springfield, MO, and La Gallette Berrichonne in Fordland, MO. Both studied at Le Cordon Bleu College of Culinary Arts in Austin, TX (Cody) and Scottsdale, AZ (Jeremy) respectively. Cody Smith is founder of Le Cochon Charcuterie which is an artisan meats and sausages stand at Farmer’s Market of the Ozarks.
